- 2 tablespoons fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 tablespoon extra-virgin olive oil

Combine the lemon juice and mustard in a large mixing bowl. Slowly drizzle in the oil while whisking until the dressing is incorporated. Season with salt and pepper to taste.
Toss the spinach, chicken, strawberries, 12-cup pecans, and onion with the dressing in a large mixing bowl.
