- 2 big skinless and boneless chicken breasts
- Kosher salt is kosher salt.

- 1 cup bread crumbs (panko)
- 1/4 cup grated fresh Parmesan
- 1 teaspoon dried oregano
- 1 tablespoon crushed red pepper flakes
- 1 teaspoon garlic powder
- 1 cup marinara sauce
- 1 cup grated mozzarella
- For garnish, use freshly chopped parsley.

Butterfly the chicken by cutting it in half widthwise all the way through, resulting in four thin pieces of chicken; season both sides with salt and black pepper.
Place the flour in a shallow bowl and season well with salt and black pepper. In a different and wide bowl, beat the eggs well with a whisk. Combine panko, Parmesan, oregano, red pepper flakes, and garlic powder in a third shallow bowl.
Coat each chicken breast in flour, brushing off any excess. Dip the chicken into the eggs, allowing excess to drop out, and then into the panko mixture, gently pressing to adhere and ensure all sides are well coated.
Arrange chicken in an air-fryer basket in a single layer, working in batches if required. Cook for 5 minutes per side at 400°, rotating once. Garnish the chicken with marinara and mozzarella. Cook for another 3 minutes at 400° until the cheese is melted and browned.
Arrange the chicken on individual plates. Garnish with parsley if desired.
