Healthy Chicken Noodle Soup Recipe: Ingredients
- 2 tablespoons extra-virgin olive oil
- 1 pound skinless boneless chicken breasts
- Kosher salt
- ground black pepper, freshly ground
- 1 teaspoon dried oregano
- 1 huge chopped onion 3 large peeled and sliced carrots
- 3 celery stalks, chopped
- 2 minced garlic cloves
- Swanson Chicken Broth 5 c.
- 3 cups water
- Thyme in a small bunch
- 1 bay leaf 1 box gluten-free noodles (12 oz.)
- 1 bunch of stemmed and shredded Tuscan kale
- 1 lemon juice
Healthy Chicken Noodle Soup Recipe: Directions
Heat 1 tablespoon oil in a big pot or Dutch oven over medium-high heat. Season the chicken all over with oregano, salt, and pepper before adding it to the saucepan. Cook until brown and well cooked, about 8 minutes per side.
Remove from the saucepan and set aside for 10 minutes before cutting into small parts.
Add around 2 tbsp chicken stock to the skillet (it should boil quickly! ), then scrape up and golden chicken parts with a wooden spoon. Cook until most of the liquid has evaporated, then add the remaining tablespoon of oil.
Heat the oil and add the onion, carrot, and celery. Season with salt and pepper and simmer for 5 minutes, or until the vegetables begin to soften. Cook until the garlic is aromatic, about 1 minute.
Pour in the broth and water, then add the bay leaf and thyme. Bring to a steady simmer and leave to cook for 15 minutes. Season with salt and pepper to taste.
Increase the heat and bring the sauce to a boil before adding the noodles. Cook for 7 minutes, or until the noodles are soft. Remove the thyme stems and bay leaves, then toss in the greens, lemon juice, and chicken. Ref.
