- 3 to 4 limes, 1/4 cup lime juice
- Crushed red pepper flakes, half a teaspoon
- 1 tablespoon of neutral oil plus 1/4 cup
- 1 lb. boneless, skinless chicken breasts with 2 teaspoons of ground cumin each
- Kosher salt
- black pepper, freshly ground
- 2 bell peppers, sliced very thinly after being seeded and ribbed
- 1 large, finely sliced yellow onion

Mix the lime juice, red pepper, 1/4 cup oil, and 1 teaspoon cumin in a sizable bowl. Chicken should be salted and peppered before being added to a bowl and coated. For at least 30 minutes or up to 2 hours, cover and chill.
The final 1 tablespoon of oil should be heated in a big skillet over medium heat.
